I just can't get enough of hommus at the moment and it is one of the most easy things I have ever made.
We are on a health kick in our household so we are dipping all our fresh vegetables into homemade hommus and hoping the protein and fibre from the chickpeas will deliver super health benefits to us all. We have also been using it as a butter replacement in wraps and sandwiches.
It's so simple to make and addictive, here's how:
600g canned chickpeas (drained and rinsed) - reserve some for decoration if you like
100ml quality extra virgin olive oil
1 tsp crushed sea salt
2 tablespoons tahini
3 cloves of garlic (crushed)
1 teaspoon ground cumin
Juice of 1 lemon
Coriander or parsley leaves (optional)
Celery, carrots, cucumber or turkish bread toasted to serve.
Process it all (I used my Thermomix) and add 50 - 70 mls of water to make a smooth consistency. Add to a bowl, garnish with the coriander / parsley and put on some chickpeas.
